2 pounds cubed chuck roast or stewing beef

1 tablespoon olive oil

1 large onion chopped

1 poblano pepper chopped

2 cloves garlic minced

1 jalapeno chopped

1 can enchilada sauce or homemade sauce (at least 19 ounces)

1 can refried beans

8 12″ flour tortillas

2 cups Monterey Jack cheese

1 cup green chile enchilada sauce
